Spring – Brilliant Beetroot Soup


Hi this is a gorgeous recipe which everyone is loving and the orange gives it an amazing sparkle.

What you will need –

x2 small onions

x2 sticks of celery

2 large carrots

1 tsp corriander seeds

2 cloves of garlic

2 bay leaves

800mls chicken stock

6 Medium Beetroots – peeled and chopped

Zest and Juice of x1 Orange

Place olive oil in a pan with onions, celery and carrots and 1 tsp of coriander seeds and gently fry still everything is starting to soften, then add garlic.  Cook for 1 min.

Add the beetroot with bayleaves then cover with the stock and summer until the beetroot is tender but not soft.

When the beetroot is cooed removed the bay leaves, blend the soup while still warm until smooth.  Season to taste and add more water or stock to reach desired consistency.

Toast 1 tsp of coriander seeds then set aside.  Zest 1 orange and squeeze juice into a pan with 1 tsp of sugar, simmer until slightly thickened.

Before serving add the orange zest to the soup then serve into bowls. Into each bowl add a blob of natural yoghurt, drizzle some olive oil plus the orange reduction then sprinkle with coriander seeds and fresh coriander.
