Christmas Fridge Cake
CHRISTMAS FRIDGE CAKE
This is loved by all in my family and secrete attempts are made to raid the fridge and sneakily snaffle the wonderful fridge cake. So enjoy and I hope you get to taste some!
You will need
- A lined 20cm rectangular tin or 24cm round springform tin
- 300g of chocolate (a mix of milk and dark)
- 125g unsalted butter
- 3 X 15mls tablespoons golden syrup
- 100g salted peanuts
- 1 X large bag of maltezes
- 100g dried apricots
- 100g dried cranberries
- 100g little marshmallows
- 30g chopped pistachios
Break up the chocolate into pieces and drop into a heavy based saucepan.
Add the butter and syrup.
Put on a low heat and melt gently together
Tip the peanuts into a bowl with all the other ingredients but only half the marshmellow and reserve a handful of cranberries for the topping.
Take the melted chocolate mixture off the heat and let cool slightly
Add the bowl of dry ingredients to the chocolate mix
Gently mix together
Tip into the cake tin, smooth and press down with a silicon spatula.
Sprinkle and press down the remaining marshmellows on top along with a handful of chopped pistachios and reserved handful of dried cranberries
Place in the fridge for 4hrs.
Can be stored in an airtight container in the fridge.
