Delicious Kale Pesto

Kale is up there amongst the super foods for its wonderful properties and the uses are wide and varied from smoothies to salads to this wonderful Kale Pesto.  So have a go the kids love it and what better way than to use up this plant when its growing like crazy even in winter.

What you will need

2 Cloves of Garlic

4tbsp Olive oil

100g Kale

1 Hand full of Basil

1/2 Lemon Juice

180 g of Pine nuts or chestnuts (Chestnuts need to be cooked and roughly chopped)

Place the kale in to boiling water and boil for 1min until wilted.  Then drain and run under cold water until cool.

Squeeze out the water from the kale then put in a food processor along with all the other ingredients.

Blitz to a thick paste and season.

Spoon into sterilised small jars and store in the fridge.

Enjoy with a bowl of penne pasta … and shavings of parmesan.
