Kiwi-style Chocolate Beetroot Brownies
This is delicious and worth a try but wear gloves if you have any!!
- 500g whole raw Beetroot (3-4 medium)
- 100g Butter
- 200g chocolate (I use a mix of dark and milk)
- 250g Caster suger
- 1tsp vanilla extract
- 3 Eggs
- 100g Plain Flour
- 25g Cocoa
Wearing gloves, top, tail and peel the beetroot then roughly chop. Place in a glass bowl with a space of water and cover. Place in the microwave on high for 5 mins or until tender. Once cooked drain the beetroot then blend until smooth.
Turn on the oven to 180’C and line a 20cm rectangular tin. Beat sugar and eggs for 2 mins till fluffy.
Melt the chocolate and and butter together slowly then add this to the mix along with the flour and cocoa. Add Beetroot then gently mix together.
Place in tin and cook for 25mins….. sprinkle with icing sugar ….. enjoy!!
