Glorious Green Tomato Chutney
GLORIOUS GREEN TOMATO CHUTNEY.
Why do tomatoes take so long to ripen and then all come at once ready for the end of summer when you no longer want salad. Or just die after weeks of care from blight leaving an exasperated gardener swearing never to do that again. But do not despair, I have a great recipe to salvage a little and turn it into a delicious Autumn treat.
What you will need –
- 1.35kg of Green Tomatoes
- 350gms Onions finely chopped
- 350gms Cooking Apples- peeled, cored and finely chopped
- 900mls Pickling Vinegar
- 350gms White or Brown Sugar
- 2 Garlic cloves
- 175g Seedless Raisins
- 2 tbsp Cooking salt
- Mint optional 1.5 tsp
Cook the chopped onions in a little water until tender, then drain well.
Place in a large pan with all the other ingredients except the mint. Bring to the boil very slowly, stirring frequently to dissolve the sugar.
Simmer for 1.5-2 hrs until thick, stirring occasionally to prevent sticking. Pour into prepared jars and cover.
(if mint preferred then now add chopped mint and mix)
Pour into prepared jars, cover and store for at least 2-3 months before using.
This is a great relish for cold meats and cheese. Enjoy!
