Winter Fruit Leather
Wonderful Winter Fruit Leather is great for kids and they cant get enough of it!! and fantastic for using up Apples, fresh or frozen plus Blackberries, Raspberries and any buried frozen fruit found in the Freezer!!
It takes a little practice but worth a go… even over cooked the kids love it!!
What you will need
- Apples 500g (ideally cooking apples)
- Raspberries/blackberries 500g (or any berries in freezer)
- A lovely honey 2 tablespoons
- Pot, cooking tray, grease proof paper and sieve (optional)
Peel and chop apples and cook for around 20mins till soft and mushy. (a little water can be added if too dry)
Add the fresh or frozen berries and cook for a further 10-15mins squishing as you stir.
At this point the mixture can be pushed through a sieve to remove the berry seeds but this is optional and the added texture is not really a problem.
If not sieving remove from heat and let cool. When luke warm add the honey and stir till dissolved.
Spread the mixture evenly on to the grease proof paper/tray, right to all the edges then place in a very low oven at 60 degrees for 12-18hrs or warming draw overnight in a aga.
Check for damp spots and if still sticking leave a little longer.
Roll and chop when warm, place in a airtight jar.
